Hi pal. Looking at your bike there's a couple places that will make a noticable difference in weight if your going lighter. Crankset, wheelset (if running dual ply tyres - single ply are much lighter) and those prized 55's. I know you wont want to part with them but they do hold a bit of weight those 55's. I use them on my FR bike. Changing anything else will only make much difference when done collectively (i.e pedals + brake calipers + seatpost).
p.s I wouldnt comprimise strength for less weight with bars + stem on a jump bike, would be dangerous if your going big.
