Of the many possible routes in the Pentlands, I would recommend the route suggested by the website addressed above. There are a variety of points where you can start on this circuit depending on what side of the hills you are coming from, see map on website for details. This route is mainly singletrack with a few connecting lanes, that show off the stunning scenery that the hills and reservoirs have to offer as well as views of the capital.
